Sferificación
Spherification is a technique developed by Ferran Adrià with which one can create spheres of different sizes, made of a gelatinous membrane from the same product it contains in its interior but in a liquid state. It is obtained through the use of alginate (a natural product derived from algae) combined with calcium salt which provokes an instantaneous gelification. The result is explosive, magical!
